It’s a Rainy Day….

 

Hello Ladies,

It’s another rainy day.  I’ve found another lovely blog.  I think you may enjoy Miss April’s blog.  It’s called Maple Grove Farm.  She’s been sick with pneumonia; but, I love how she’s found blessings even in being ill.  I’m saying a prayer for her this morning.

I’ve a sprained ankle; so, I’ll be doing a lot of sitting today.  I plan to do a little sewing, too. I’ve got a shopping bag to make for the swap over at Miss Rhonda’s blog, Down-to-Earth.  I’ve only been reading it for a few weeks, but I’ve been enjoying it.  It’s a simple and frugal living type of blog. 

I’ve just topped 4000 visits to my blog.  I thank you all for your kindness.  I do wish you all would say, “Hello” in the comments section.  I absolutely love hearing from my readers.

Old Fashioned Chicken and Dumplings

Chicken and Dumplings

 

This can be made very frugally with a few backs and necks.

 

10 lbs Chicken leg quarters,

The more chicken you boil, the better the broth.

6 eggs

flour

salt & pepper

Okay, first of all, put the chicken into a large stockpot. Salt and pepper it generously. Boil the chicken for at least an hour, until the chicken is ready to fall off the bones. Take the chicken from the broth, and put it in the refrigerator until it’s cool enough to handle. Keep the broth simmering.

Next, crack six eggs into a large bowl and beat well with a fork. Add some salt and pepper. Start adding flour half a cup at a time until the dough becomes stiff, hard to mix, and a bit dry. Bring the broth back to a full boil, then begin dropping dough by teaspoonfuls into the broth. Allow them to boil about 20-30 minutes until they are cooked through when you cut them. It won’t hurt them to cook them a little longer. Meanwhile, de-bone the chicken and add back as much chicken as you’d like to the broth. Save the rest for another meal.

Serve this up on a bed of mashed potatoes and enjoy!

The Best Laid Plans of Mice and Men Often Go Awry!

Our communion supper went well Thursday evening.  My husband read the scriptures about the last supper.  Then we enjoyed our communion dinner.   It wasn’t perfect, but only Jesus is.

Today, our plans to color eggs were set aside to attend an event here in town that we found out of spur of the moment.  It was an art day for the kids held by Precious Moments.  We went and the kids had fun. 

So, egg coloring has been postponed until tomorrow morning.  Tomorrow afternoon I’ll make the little Easter basket cupcakes complete with jelly beans and a handle made of red licorice.  The kids don’t know about this yet.  It will be a nice surprise. 

Tomorrow night we’ll make the Resurrection cookies.

Easter Weekend Plans 2008

Hi Friends,

I’ve been thinking of my plans for the coming weekend.  Those of you who are Christians know that this is Holy Week.  Now, my husband and I are what I call first generation Christians, though some of our parents are now saved.  We don’t have traditions that have been handed down regarding Easter.  All we knew was the Easter bunny came and gave us a big basket of candy which we then made ourselves sick on. 

When we had our own children, I started thinking about what I’d like it to be for our family.  We’re still in the process of making our own traditions.

Here’s what I’ve got in mind for this week:

Thursday-  “Last Supper” Communion dinner of homemade bread and grape juice.  We’ll talk about Jesus’ last days and the crucifixion and resurrection. 

Note to me…make homemade bread in the morning and stir up the grape juice.

Friday-  We’ll color eggs just because it’s fun, and they make a good snack.  We’ll eat them during the weekend.

Note to me…boil 18 eggs early Friday morning. 

Saturday- In the morning, I’ll make cupcakes with jellybeans and licorice to look like Easter baskets.  In the evening, we’ll make Resurrection Cookies.  Hillbilly Sweetpea shares the recipe here.

Sunday- We’ll go to church, have an egg hunt there, then come home to a nice ham dinner.  My mother-in-love will join us for the day.  I usually give the kids a small gift, $5 or less and a little candy in a basket.  The Easter bunny doesn’t stop at our house, he just hops on by. ~smile~

I’d love to hear what your plans are for the weekend.  Maybe you have an idea we’d like to add to our celebration.

Whatever you do this weekend, keep the focus on our Lord and Savior Jesus Christ.
